Instructions
Prepare the Marinade:
In a large bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, thyme, salt, and pepper.
Marinate the Salmon:
Add the salmon cubes to the marinade and gently toss to coat. Let it marinate for about 30 minutes in the refrigerator.
Assemble the Kebabs:
Thread the marinated salmon, zucchini pieces, and onion chunks onto the soaked skewers. Alternate between salmon and vegetables for an appealing presentation.
Preheat the Grill:
Heat your grill to medium-high. If using a grill pan indoors, preheat it over medium heat.
Grill the Kebabs:
Place the kebabs on the grill and cook for about 10–15 minutes, turning them every few minutes until the salmon is opaque and flakes easily with a fork.
Serve:
Remove from the grill and serve warm with lemon wedges on the side.
