Salmon, Zucchini, and Lemon Kebabs Recipe



Ingredients
  • 1.5 lbs salmon fillet, cut into 1-inch cubes
  • 2 medium zucchinis, cut into 1-inch pieces
  • 1 small red onion, cut into chunks
  • 2 tablespoons olive oil
  • Juice and zest of 1 lemon
  • 3 garlic cloves, minced
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
  • Salt and pepper, to taste
  • 8 to 10 wooden skewers (soaked in water for 30 minutes)

Instructions

  1. Prepare the Marinade:
    • In a large bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, thyme, salt, and pepper.
  2. Marinate the Salmon:
    • Add the salmon cubes to the marinade and gently toss to coat. Let it marinate for about 30 minutes in the refrigerator.
  3. Assemble the Kebabs:
    • Thread the marinated salmon, zucchini pieces, and onion chunks onto the soaked skewers. Alternate between salmon and vegetables for an appealing presentation.
  4. Preheat the Grill:
    • Heat your grill to medium-high. If using a grill pan indoors, preheat it over medium heat.
  5. Grill the Kebabs:
    • Place the kebabs on the grill and cook for about 10–15 minutes, turning them every few minutes until the salmon is opaque and flakes easily with a fork.
  6. Serve:
    • Remove from the grill and serve warm with lemon wedges on the side.
