Ham and Rice Casserole Recipe



Here’s a simple and delicious recipe for Ham and Rice Casserole that is perfect for using up leftover ham. This dish is easy to prepare and makes a hearty meal.

Ingredients

  • Casserole Base
    • 300 g cooked ham, thickly sliced and diced
    • 250 g rice (long grain)
    • 225 g mixed vegetables (e.g., broccoli, carrots, green beans), chopped
    • 1 can (285 g) condensed cream of mushroom soup
    • 275 ml chicken or vegetable stock
    • 2 tsp Italian seasoning
    • 1 tbsp lemon juice
    • Salt and pepper to taste
    • 125 g grated Cheddar cheese

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 180°C (350°F).
  2. Mix Ingredients:
    • In a large bowl, combine the cooked rice, diced ham, mixed vegetables, cream of mushroom soup, chicken or vegetable stock, Italian seasoning, lemon juice, salt, and pepper. Mix well.
  3. Transfer to Baking Dish:
    • Spoon the mixture into a buttered ovenproof dish (approximately 30 x 20 x 5 cm or 11 x 8 x 2 inches). Level the surface.
  4. Bake:
    • Cover the dish with a lid or aluminum foil and bake in the preheated oven for 45 minutes, or until the rice is tender.
  5. Add Cheese:
    • After baking, remove the cover and sprinkle the grated Cheddar cheese over the top. Increase the oven temperature to 200°C (400°F) and return the dish to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Allow the casserole to cool for a few minutes before serving. Enjoy your hearty meal!
