Season the beef roast with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
Roast the Beef:
Transfer the seared roast to a roasting pan. Add minced garlic, beef broth, Worcestershire sauce, and any fresh herbs.
Cover with foil and roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches medium rare (135°F or 57°C). Let it rest for at least 15 minutes before slicing.
Make the Au Jus:
While the roast rests, pour the drippings into a saucepan. If there isn’t enough liquid, add additional beef broth.
Bring to a simmer and season with salt and pepper to taste.
Assemble the Sandwiches:
Slice the French rolls in half and layer with sliced roast beef. If desired, top with provolone cheese.
Place under a broiler for a few minutes until the cheese melts and the bread is toasted.
