California French Dip Sandwich Recipe


Ingredients

  • For the Roast Beef
    • 2 pounds boneless beef roast (chuck or ribeye)
    • 2 tablespoons olive oil
    • Salt and pepper to taste
    • 4 cloves garlic, minced
    • 2 cups beef broth
    • 1 tablespoon Worcestershire sauce
    • Optional: fresh herbs (like thyme or rosemary)
  • For the Au Jus
    • Drippings from the roast
    • Additional beef broth (if needed)
  • For the Sandwiches
    • French rolls or baguettes
    • Sliced provolone cheese (optional)
    • Mustard (optional)

Instructions

  1. Prepare the Roast:
    • Preheat your oven to 325°F (165°C).
    • Season the beef roast with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
  2. Roast the Beef:
    • Transfer the seared roast to a roasting pan. Add minced garlic, beef broth, Worcestershire sauce, and any fresh herbs.
    • Cover with foil and roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches medium rare (135°F or 57°C). Let it rest for at least 15 minutes before slicing.
  3. Make the Au Jus:
    • While the roast rests, pour the drippings into a saucepan. If there isn’t enough liquid, add additional beef broth.
    • Bring to a simmer and season with salt and pepper to taste.
  4. Assemble the Sandwiches:
    • Slice the French rolls in half and layer with sliced roast beef. If desired, top with provolone cheese.
    • Place under a broiler for a few minutes until the cheese melts and the bread is toasted.
  5. Serve:
    • Serve each sandwich with a small bowl of au jus for dipping.
