Add the bologna slices to the skillet. Fry for about 2-3 minutes on each side until they are browned and slightly crispy. You can make a small slit in the edge of each slice to prevent curling.
Toast the Bread:
While the bologna is frying, you can toast the bread in another pan or in a toaster until golden brown.
Assemble the Sandwich:
Spread mustard or mayonnaise on one side of each slice of toasted bread.
Place the fried bologna on one slice of bread. If using, add cheese, lettuce, tomato, and pickles as desired.
Top with the second slice of bread.
Serve:
Cut the sandwich in half if desired and serve hot.
