Pimento Cheese Sandwich
Ingredients:
- 2 cups sharp cheddar cheese, shredded
- 1/2 cup mayonnaise
- 4 oz jarred pimentos, drained and chopped
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 teaspoon black pepper
- Salt, to taste
- Soft white bread or sandwich bread
- Optional: pickles, lettuce, or tomato for extra toppings
Instructions:
Make the pimento cheese spread:
- In a medium bowl, combine the shredded cheddar cheese, mayonnaise, chopped pimentos, garlic powder, black pepper, and cayenne pepper (if you want a little kick). Mix well until all ingredients are fully incorporated.
- Taste and adjust the seasoning with salt and pepper as needed. If you prefer a smoother consistency, you can mix it longer or pulse it in a food processor for a creamier spread.
Prepare the sandwich:
- Spread a generous amount of the pimento cheese mixture onto a slice of soft white bread.
- Add optional toppings like lettuce, tomato, or pickles, if desired.
- Top with another slice of bread.
Serve:
- Cut the sandwich diagonally and serve with chips, pickles, or a side salad.
Store any leftovers:
- The pimento cheese spread can be stored in an airtight container in the fridge for up to a week.
