Pimento Cheese Sandwich



Ingredients:

  • 2 cups sharp cheddar cheese, shredded
  • 1/2 cup mayonnaise
  • 4 oz jarred pimentos, drained and chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Soft white bread or sandwich bread
  • Optional: pickles, lettuce, or tomato for extra toppings

Instructions:

  1. Make the pimento cheese spread:

    • In a medium bowl, combine the shredded cheddar cheese, mayonnaise, chopped pimentos, garlic powder, black pepper, and cayenne pepper (if you want a little kick). Mix well until all ingredients are fully incorporated.
    • Taste and adjust the seasoning with salt and pepper as needed. If you prefer a smoother consistency, you can mix it longer or pulse it in a food processor for a creamier spread.
  2. Prepare the sandwich:

    • Spread a generous amount of the pimento cheese mixture onto a slice of soft white bread.
    • Add optional toppings like lettuce, tomato, or pickles, if desired.
    • Top with another slice of bread.
  3. Serve:

    • Cut the sandwich diagonally and serve with chips, pickles, or a side salad.
  4. Store any leftovers:

    • The pimento cheese spread can be stored in an airtight container in the fridge for up to a week.
