Sri Lankan Mixed Rice Recipe
Mixed Rice
Ingredients:
- 2 cups of rice (Basmati or any long-grain variety)
- 4 cups of water
- Salt to taste
- Optional herbs/spices (e.g., pandan leaves or curry leaves)
Instructions:
- Rinse the Rice:
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- Cook the Rice:
- In a pot, combine rinsed rice and water. Add salt and optional herbs/spices for flavor.
- Bring to a boil over high heat. Once boiling, reduce heat to low, cover with a lid, and simmer for about 15–20 minutes, or until all water is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes.
- Fluff and Serve:
- Fluff the rice with a fork before serving alongside the fish curry
