Porchetta-Style Pork Kebabs Recipe


Ingredients
  • 2 lbs pork shoulder, cut into 1-inch cubes
  • 1/2 cup extra-virgin olive oil
  • 1 medium onion, thinly sliced
  • 1 fennel bulb, trimmed and thinly sliced
  • 2 tablespoons fennel seeds
  • 2 tablespoons chopped fresh rosemary
  • 6 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • Wooden skewers (soaked in water for 30 minutes)

Instructions

  1. Prepare the Marinade:
    • In a large bowl, combine the olive oil, sliced onion, fennel, fennel seeds, rosemary, minced garlic, salt, and pepper. Mix well.
  2. Marinate the Pork:
    • Add the pork cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour (or overnight for more flavor).
  3. Preheat the Grill:
    • Preheat your grill to medium-high heat.
  4. Assemble the Kebabs:
    • Thread the marinated pork onto the soaked skewers, leaving a little space between each piece for even cooking.
  5. Grill the Kebabs:
    • Place the kebabs on the grill and cook for about 10–15 minutes, turning occasionally until the pork is cooked through and has nice grill marks.
  6. Serve:
    • Remove from the grill and let rest for a few minutes before serving. Enjoy with lemon wedges or your favorite dipping sauce.
