Sri Lankan Gotukola Sambol (Pennywort Salad) Recipe
Ingredients
- 1 large bunch of gotu kola (or substitute with parsley or spinach)
- 1 red onion, finely chopped
- 8 cherry tomatoes, roughly chopped
- 1 green chili, finely sliced (adjust to taste)
- 2 tablespoons fresh grated coconut (or unsweetened desiccated coconut)
- Juice of 1 lime
- Salt, to taste
Instructions
Step 1: Prepare the Gotu Kola
- Wash the Leaves: Rinse the gotu kola leaves thoroughly under cold water and pat them dry.
- Chop the Leaves: Finely chop the leaves, including part of the tender stems, and place them in a large mixing bowl.
Step 2: Combine Ingredients
- Add Vegetables: To the bowl, add the finely chopped red onion, roughly chopped cherry tomatoes, and sliced green chili.
- Incorporate Coconut: Sprinkle the grated coconut over the mixture.
Step 3: Mix and Season
- Mix Ingredients: Using your hands, mix all the ingredients gently to combine them well.
- Add Lime Juice and Salt: Squeeze lime juice over the sambol and add salt to taste. Mix again.
- Let Rest: Allow the sambol to rest for about 10 minutes to let the flavors meld.
