Sri Lankan Gotukola Sambol (Pennywort Salad) Recipe



Ingredients

  • 1 large bunch of gotu kola (or substitute with parsley or spinach)
  • 1 red onion, finely chopped
  • 8 cherry tomatoes, roughly chopped
  • 1 green chili, finely sliced (adjust to taste)
  • 2 tablespoons fresh grated coconut (or unsweetened desiccated coconut)
  • Juice of 1 lime
  • Salt, to taste

Instructions

Step 1: Prepare the Gotu Kola

  1. Wash the Leaves: Rinse the gotu kola leaves thoroughly under cold water and pat them dry.
  2. Chop the Leaves: Finely chop the leaves, including part of the tender stems, and place them in a large mixing bowl.

Step 2: Combine Ingredients

  1. Add Vegetables: To the bowl, add the finely chopped red onion, roughly chopped cherry tomatoes, and sliced green chili.
  2. Incorporate Coconut: Sprinkle the grated coconut over the mixture.

Step 3: Mix and Season

  1. Mix Ingredients: Using your hands, mix all the ingredients gently to combine them well.
  2. Add Lime Juice and Salt: Squeeze lime juice over the sambol and add salt to taste. Mix again.
  3. Let Rest: Allow the sambol to rest for about 10 minutes to let the flavors meld.
