Ingredients

For the Blini Batter:

  • 2 cups (250 g) all-purpose flour
  • 2 large eggs
  • 2 ½ cups (600 ml) milk (whole or 2%)
  • 1 tablespoon (12 g) granulated sugar
  • ½ teaspoon salt
  • ½ teaspoon baking soda (optional for a lacy texture)
  • 2 tablespoons vegetable oil (plus more for cooking)

For Serving:

  • Sour cream
  • Jam or honey
  • Smoked salmon
  • Caviar
  • Fresh fruits

Instructions

Step 1: Prepare the Batter

  1. In a large mixing bowl, whisk together the eggsmilk, and sugar until well combined.
  2. Gradually add the floursalt, and baking soda (if using), whisking until the batter is smooth and free of lumps. You can use a blender for a lump-free consistency.
  3. Stir in the vegetable oil. Let the batter rest for about 20-30 minutes at room temperature to improve texture.

Step 2: Cook the Blini

  1. Heat a non-stick skillet or crepe pan over medium heat and lightly grease it with oil.
  2. Pour about ¼ to ⅓ cup of batter into the center of the pan. Immediately tilt and swirl the pan to spread the batter evenly into a thin layer.
  3. Cook for about 30 seconds, or until the edges are golden and the top appears set. Flip the blin carefully and cook for another 20-30 seconds on the other side.
  4. Remove from the pan and stack on a plate, brushing each blin lightly with melted butter to keep them moist.

Step 3: Serve

Serve your blini warm with various toppings such as:

  • Sweet options: sour cream, jam, honey, or fresh fruits.
  • Savory options: smoked salmon, caviar, or sautéed mushrooms.
