For the Blini Batter:
- 2 cups (250 g) all-purpose flour
- 2 large eggs
- 2 ½ cups (600 ml) milk (whole or 2%)
- 1 tablespoon (12 g) granulated sugar
- ½ teaspoon salt
- ½ teaspoon baking soda (optional for a lacy texture)
- 2 tablespoons vegetable oil (plus more for cooking)

- Jam or honey
- Smoked salmon

Instructions
Step 1: Prepare the Batter
- In a large mixing bowl, whisk together the eggs, milk, and sugar until well combined.
- Gradually add the flour, salt, and baking soda (if using), whisking until the batter is smooth and free of lumps. You can use a blender for a lump-free consistency.
- Stir in the vegetable oil. Let the batter rest for about 20-30 minutes at room temperature to improve texture.
Step 2: Cook the Blini
- Heat a non-stick skillet or crepe pan over medium heat and lightly grease it with oil.
- Pour about ¼ to ⅓ cup of batter into the center of the pan. Immediately tilt and swirl the pan to spread the batter evenly into a thin layer.
- Cook for about 30 seconds, or until the edges are golden and the top appears set. Flip the blin carefully and cook for another 20-30 seconds on the other side.
- Remove from the pan and stack on a plate, brushing each blin lightly with melted butter to keep them moist.
Step 3: Serve
Serve your blini warm with various toppings such as:
- Sweet options: sour cream, jam, honey, or fresh fruits.
- Savory options: smoked salmon, caviar, or sautéed mushrooms.
