Sri Lankan Pol Sambol (Spicy Coconut Garnish) Recipe
Ingredients
- 100 g grated coconut (fresh or desiccated)
- 8 to 12 dried red chilies (adjust for spice preference)
- 5 to 7 small onions (or shallots, finely chopped)
- 1/2 lime (juice)
- 1/4 teaspoon sugar
- Salt, to taste
Instructions
Step 1: Prepare the Chilies
- Grind Chilies: In a mortar and pestle, grind the dried red chilies with a pinch of salt until you achieve a coarse flake consistency.
Step 2: Combine Ingredients
- Add Coconut: Wash the mortar and pestle, then add the grated coconut and the ground chili flakes. Bash and muddle them together until well combined.
- Incorporate Sugar and Onions: Add the sugar and continue to mix. Finally, add the chopped onions and gently combine without over-mashing, allowing some onion pieces to remain intact for texture.
Step 3: Season
- Adjust Flavor: Taste the sambol and adjust salt as needed. Squeeze in lime juice and mix everything well.
