Sri Lankan Pol Roti (Coconut Roti) Recipe
Ingredients
- 2 cups all-purpose flour
- 1 cup grated coconut (fresh or desiccated)
- 1-2 medium onions, finely sliced
- 1-2 green chilies, finely sliced (optional)
- 1 teaspoon salt (or to taste)
- 1/2 cup water (adjust as needed)
- Oil (for cooking)
Instructions
- Prepare the Dough:
- In a large bowl, combine the flour, grated coconut, sliced onions, green chilies, and salt.
- Gradually add water while mixing until you form a sticky dough. Knead for about 5 minutes until smooth.
- Shape the Roti:
- Divide the dough into 8–10 equal portions and roll each into a ball.
- On a lightly oiled surface, flatten each ball into a circle about 5–6 inches in diameter.
- Cook the Roti:
- Heat a non-stick skillet or tawa over medium heat.
- Place the roti on the hot pan without oil and cook for about 2–3 minutes on one side until lightly browned.
- Flip and cook the other side for another 2–3 minutes. Repeat with remaining dough.
- Serve:
- Serve warm with potato curry or any preferred side dish.
