Sri Lankan Pol Roti (Coconut Roti) Recipe



Ingredients

  • 2 cups all-purpose flour
  • 1 cup grated coconut (fresh or desiccated)
  • 1-2 medium onions, finely sliced
  • 1-2 green chilies, finely sliced (optional)
  • 1 teaspoon salt (or to taste)
  • 1/2 cup water (adjust as needed)
  • Oil (for cooking)

Instructions

  1. Prepare the Dough:
    • In a large bowl, combine the flour, grated coconut, sliced onions, green chilies, and salt.
    • Gradually add water while mixing until you form a sticky dough. Knead for about 5 minutes until smooth.
  2. Shape the Roti:
    • Divide the dough into 8–10 equal portions and roll each into a ball.
    • On a lightly oiled surface, flatten each ball into a circle about 5–6 inches in diameter.
  3. Cook the Roti:
    • Heat a non-stick skillet or tawa over medium heat.
    • Place the roti on the hot pan without oil and cook for about 2–3 minutes on one side until lightly browned.
    • Flip and cook the other side for another 2–3 minutes. Repeat with remaining dough.
  4. Serve:
    • Serve warm with potato curry or any preferred side dish.
