Sri Lankan Cheese Kottu Recipe
Ingredients
- 6 roti (or parathas, torn into pieces)
- 2 tablespoons canola oil
- 1 medium onion, finely chopped
- 1 tablespoon crushed garlic
- 1 tablespoon crushed ginger
- 1 teaspoon pepper powder
- 2 sliced leeks, washed
- 100 grams shredded cheese (cheddar or your choice)
- 4 eggs
- 1 cup grated carrots
- Salt and pepper, to taste
- Optional: 100 grams of cooked meat (e.g., shredded chicken or leftover curry)
Instructions
Step 1: Prepare the Ingredients
- Tear the Roti: Tear the roti or parathas into small pieces and set aside.
- Chop Vegetables: Prepare all vegetables by chopping them as needed.
Step 2: Cook the Base
- Heat Oil: In a large pan or wok, heat the canola oil over medium heat.
- Sauté Aromatics: Add the chopped onion, garlic, and ginger to the pan. Sauté until the onions become translucent.
- Add Leeks and Carrots: Stir in the sliced leeks and grated carrots, cooking for about 3–5 minutes until they soften.
Step 3: Add Eggs and Cheese
- Scramble Eggs: Push the vegetable mixture to one side of the pan. Crack the eggs into the empty side and scramble them until cooked.
- Combine Ingredients: Mix the scrambled eggs with the vegetables, then add the torn roti pieces to the pan.
- Add Cheese: Sprinkle shredded cheese over the mixture and stir well to combine everything thoroughly.
Step 4: Season and Serve
- Season: Add salt, pepper, and additional pepper powder to taste. Stir everything together until heated through and cheese is melted.
- Serve Hot: Transfer to a serving dish and enjoy your Cheese Kottu hot!
